Yes they exist, but you have to make them yourself!
Claire’s favorite food is chicken tenders, but she cannot have gluten, yeast, egg yolks, onion, or garlic. I wanted her first day on “detox” to be as painless as possible, so I attempted to make them. Here is my recipe:
- Gluten-free, yeast free breadcrumbs [about 1/2 cup]
- salt [1 tsp]
- black pepper [1 tsp]
- 1/4 cup of Parmesan cheese [I used some made from rice instead of cow’s milk]
- 1 egg white
Put the egg white in a bowl. Mix the other ingredients together. Dip the chicken tenders in the egg and then roll in the dry ingredients. Bake at 375 degrees for 23 minutes.
She likes them! Victory!
My daughter Claire and I have been feeling less than great for over a year now. She constantly has headaches and feels tired as have I. I have tried dieting to lose weight and have had no success. After a bout with strep throat and bronchitis, my doctor suggested undergoing a new series of allergy tests. The last thing that I want to do is have to undergo allergy shots again. I’m not averse to pain, rather with two busy teenagers and a full time job, I just don’t have time to go for the weekly shots again.
A friend suggested that I try the ALCAT test for food sensitivities. After looking into it, I decided that both Claire and I should take it. After getting our results, I can see why we’ve felt so terrible.
Both of are sensitive to gluten and Claire cannot have yeast. Did I mention that bread is her favorite food?
We just got her results on Friday and as yesterday was her birthday, I decided we would start her “detox” tomorrow. Mondays are always a good day to start. So this morning I have been searching for gluten free-yeast free-HFCS [high frutcose corn syrup] free bread alternatives so that I can prepare this afternoon for the upcoming week. I found that one of our health food stores sells a mix that fits the bill, so I’m off to the store now. Did I mention that I don’t do a lot of cooking either?
This should be an interesting journey…
